An Old Favorite

This is one of the very first dinner recipes I was taught to make. My mom use to make it a lot and it's one that I now make with my eyes closed. (wink)
When people ask me for the recipe I have to stop and think. I've seriously made it that much that I just - do it! I throw everything together, I don't measure.
It's my "go to" recipe when I'm having a group of people over because it has always been a hit with everyone! Including the kids!
It's so easy to make and smells so yummy while baking!
So here you go, one of my all time favorite recipes - Poppy Seed Chicken!
 
 
Ingredients:
5 cups chicken breasts, cooked and cubed
1 cup sour cream
2 cans condensed cream of chicken soup
2 cups crushed Ritz crackers (about 1 1/2 rolls of crackers)
1/2 cup melted butter
1 T poppy seeds

*For my family size I more then double this recipe and always use a little more sour cream then what is called for. I also like a thick crust of crackers so I add to that as well.

Instructions:
Preheat oven to 350 degrees.
Boil raw chicken breasts until done. Let chicken cool slightly and cut into one inch cubes. Place cubed chicken in a 9X13 casserole dish.

Stir together the condensed soup and sour cream. Pour over the chicken.

In a separate bowl, stir together the crushed crackers, poppy seeds and melted butter. Sprinkle over the chicken mixture.
 
Bake for 30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly.
