Its cold and rainy in my part of PA today, a good day for my Grams veggie soup.
My Gram use to make veggie soup for the entire family and it was so good. She had a yearly soup day in her home every Jan. to celebrate my Pappy’s birthday. Since she just – throws it together – (her words) she guessed at some of the amounts, but I’m sure it will turn out just as good for you!

Saute beef cubes and onion until meat is almost cooked through (the amount is up to you)
Add water–about 3 inches above meat–simmer about I/2 hour
Add: 1 large can of tomato puree
1 large can of diced tomatoes
2 fresh carrots-sliced
1 small head of cabbage–cut up into bite size pieces
2-3 potatoes-peeled and diced
2 bags of frozen soup vegetables or mixed vegetables
1 bag each of frozen corn, green beans, peas
S&P to taste
Beef bouillon to taste
You may have to add more water as you go–if it gets too thick
Simmer about 4 hours–the longer it simmers, the better it gets.
This recipe makes about 5 quarts, give or take – Enjoy!
